The Importance of this Festival
The highlight of this celebration is longganisa, which comes in an extensive number of regional flavors. The event is a trip through the varied palate of Filipino sausages, from the garlicky richness of Vigan longganisa to the slightly sweet treats from nearby provinces. With a secret spice blend passed down through the centuries, each vendor adds a special touch that creates a rainbow of flavors that dance on the tongue.
